mmm...cheese.

There are many food things that I miss now that I don't live in the South anymore. Growing up down there, certain food becomes part of your life, you expect it. Fortunately, I am (or could be) capable of making what I "need" or crave when it comes to Southern food. However, one thing that I (we) have learned is that trying to get queso at a Mexican restaurant up here is just met with strange looks. This is mostly due to the region in Mexico it seems most Mexicans that have migrated to the area come from...which would be a more coastal region.

Anyway, enough geography, we're talking about food here. We decided that what we really needed, in order to get our fix, was cheese -- queso specifically...oh and something to eat to go along with it...like...burritos! So, we found a queso recipe that turned out to be pretty good, grilled up some chicken and veggies, and made some guacamole (courtesy Mr. Alton Brown). You can see the result here in it's disassembled form.

The final product turned out quite well. Throw in a good bag of blue corn tortilla strips and a couple of beers and we were quite happy -- no more empty stomaches and gone was our hankerin' (hankering just doesn't sound right ;)

Seems this is my first food blog-like post, and I have to say that I had fun with it. I do get tired of hearing myself rant about everything, as I'm sure everyone else does too.

Off to bed now, I've stayed up way too late now.
